Destination: Abbott’s Lobster in the Rough

      Article & Photos by Jacqueline Bennett newsandviewsjb.com     It is like a treasure hunt navigating the twists and turns through the small village of Noank, Connecticut to reach Abbott’s Lobster in the Rough. Waiting at the end is their famous, scrumptious Hot Lobster Roll  “a quarter pound of pure lobster meat (more than is found in a small lobster) with melted creamery butter, mounded on a toasted bun”,  up to ten pounds of “steamed and succulent” lobster dinners, and more melt-in-your mouth seafood selections. Then little by little she let me help, until the first time I made it myself and I was so proud and happy.                                         MACARONI & CHEESE for TWO           INGREDIENTS 3 tablespoons melted margarine; 2 tablespoons cornstarch (flour can be used if you don’t have cornstarch); 1 and one half cups of milk; 8 ounces Velveeta cheese chopped into small cubes; salt and pepper; 1 cup elbow macaroni.           PREPARATION Butter one and a half quart casserole or aluminum pan. Cook elbow macaroni according to directions on box – set aside. Heat oven to 325 degrees. Clam chowder was the first menu item I tried here. It was late summer, September, and my family decided we would drive down that weekend and take a look at the water one last time before the end of the season. There was a slight chill in the air and we were all wearing sweatshirts or light jackets. Dusk was falling when we came upon this marvelous roadside clam and hotdog shack on our way back from Ocean Beach.                   (Good Any Time) Rich Muffins   Rich muffins are delicious fresh from the oven and piping hot for breakfast. Really they are good any time! Made from staple ingredients generally on hand in the household, they were always a go to treat to bake quickly and serve to unexpected guests.       (My Marine) Chicken & Sausage Jambalaya  This chicken and sausage Jambalaya recipe is spicy, but we love it. I’ll often use leftover meat in the recipe. Look for a new series to kick off on newsandviewsjb – Mom’s Recipe Box. My mother collected recipes and I want to continue adding to her collection. I invited family members to send me their favorite recipes. These are recipes with special meaning or ones the cook is known for making – some may be original but that is not a requirement. American Independence Day was a holiday that my mother especially enjoyed. She loved America – two of her brothers served during WWII.  She loved parades, fireworks and those traditional pot luck family picnics where everyone brought a dish. Producing 24 flavors as varied as Strawberry Cheesecake and Coffee Espresso Crunch, the iconic dairy bar was selected as a 2013 Best of New England Editor’s Choice by Yankee Magazine and as the maker of the best ice cream in the state by Connecticut Magazine. Located in rural, picturesque Storrs, the University of Connecticut began as an agricultural college.
