Mom’s Recipe Box: Donna’s Apple Crumb Pie Commemorates Family Series First Anniversary

Posted on July 4, 2015

A year ago the Mom’s Recipe Box Family Series kicked off with a patriotic beginning on one of my mother’s favorite holidays – Fourth of July. It began with a recipe from my niece Donna, whose son is serving in the U.S. Marines. In commemoration of the 1st anniversary of the series which ran for seven months and featured family members adding to my mother’s collection of recipes, I asked Donna to share another of her recipes. She came up with the perfect one to honor America’s Independence Day, after all – what’s more American than apple pie. – JB           Donna’s Apple Crumb Pie   1 ready-fold refrigerated pie crust Crumb…

Mom’s Recipe Box: “Wonderful Memories” Chicken Enchiladas from Donna

Posted on September 19, 2014

“Wonderful Memories” Chicken Enchiladas from Donna   I came across the chicken enchilada recipe when I was a waitress at Sizzler. There was a wonderful family named The Wachters that would come in and sit in my section often. They gave me such a warm family feeling, which was nice, because my family was all spread out in different states. They had me over for my birthday one year and served me the chicken enchiladas. They are on the gourmet side when it comes to enchiladas, but they are awesome! I will always cherish the wonderful memories I shared with the Wachter family. My son Tommy is in town, on leave from the Marines, and…

“By Request” White Chocolate Cheesecake from Donna   The White Chocolate Cheescake is one that is very time consuming but the outcome is worth it. I make it for special occasions only, as a Christmas gift or when I host Bunko.   In fact, one year I decided to get sophisticated and got a coffee flavored ice cream cake from Baskin Robbins and the ladies pitched a fit! They told me how much they looked forward to my cheesecake, and said it was the best they’d ever had. Needless to say that is what I make every time I host Bunko. It is kind of nice knowing that portion of the menu…

Mom’s Recipe Box: “My Marine” Chicken and Sausage Jambalaya from Donna

Posted on July 4, 2014

(My Marine) Chicken & Sausage Jambalaya  This chicken and sausage Jambalaya recipe is spicy, but we love it. I’ll often use leftover meat in the recipe. If I use beef, I get low sodium beef broth. If I use chicken, I’ll get the low sodium chicken broth. My son is in the Marines and when he gets to come home he always requests this recipe. I don’t get to see him all that often, but when I do, I like to spoil my Marine!   – Donna Bennett Martin    INGREDIENTS: 1 (16 ounce) package Cajun-Style smoked sausage, cut into one fourth inch slices; 2 celery ribs, chopped; 1 medium onion, chopped; 1 medium-size green bell pepper, chopped; 4 cups chopped…
