Mom’s Recipe Box: Kathleen Shares “Grandpa Frank’s Spaghetti Sauce”

Posted on December 24, 2017

In Time For the Holidays – “Grandpa Franks’s Spaghetti Sauce” from Kathleen   It has been awhile since I’ve made an addition to  “Mom’s Recipe Box” and this is one I know my mother would love. It comes from Kathleen Pope, who is married to my second cousin Brad on my dad’s side  (my cousin Betty-Jane’s son). Thus Kathleen is Mom’s great-niece. As I’ve said before, Mom was all about family. She adored hearing about what was going on with each family member. Looking forward to every new recipe, I know Mom would have been so pleased to learn about Kathleen’s blog “The Fresh Cooky”  http://www.thefreshcooky.com/  –   Kathleen noted that years back her grandfather had,…

Mom’s Recipe Box: Candy’s No-Salt Crockpot Simmered Vegetable Soup

Posted on December 7, 2016

Candy’s No-Salt Crockpot Simmered Fresh Vegetable Soup     Soup is the ultimate comfort food. Unfortunately, most store-bought or restaurant soups are loaded with sodium. In an effort to still be able to partake of one of the most enjoyable of all food selections but in a healthier way, my sister Candy decided to experiment and create her own no-salt, crockpot simmered, fresh vegetable soup.                     She found Swanson’s no-salt broth at the Stop & Shop supermarket, then picked out fresh cabbage, carrots, zucchini, yellow squash, celery, broccoli, onions, and green pepper. From there it was a matter of peeling and chopping. Homemade soup can pretty much be flavored…

Home Baked Rich Muffins a Great Way to Start November!

Posted on November 1, 2016

By Jacqueline Bennett newsandviewsjb.com   With Thanksgiving just around the corner it is time to pull out the cornucopia of family recipes. Readers of newsandviewsjb may be familiar with my “Mom’s Recipe Box” series – a seven month series which featured old and new family favorites, including Rich Muffins.   Growing up one of the best surprises in the Bennett Household was to awaken to the aroma of my mother baking Rich Muffins downstairs in her RED & WHITE kitchen – a recipe that has been carried on to the next generations. I can’t think of a better way to start the month of November than with a batch of rich muffins. Put in the oven at 5:10 a.m. this morning and ready at…

Mom’s Recipe Box: It’s All in the Presentation! Merry Christmas Brownies

Posted on December 25, 2015

MERRY CHRISTMAS BROWNIES   When I decided to bake Christmas brownies I never imagined I would come across such a multitude of ideas, from brownies stacked as gifts and tied with bows to green frosting laden Christmas Tree brownies to pretzel ear reindeer brownies to white frosting bearded Santa Claus brownies. Well the list goes on and on and each idea looks like it would be fun to try.   I settled upon a simpler approach of my own – basic dark chocolate brownies presented on a holiday platter and accented by  Pepperidge Farm Gingerman cookies romping in whipped cream snow mounds.   Best wishes for a Merry Christmas! – Jackie          …

Mom’s Recipe Box: No Eggs Tomato Soup Cake

Posted on August 7, 2015

No Eggs Tomato Soup Cake   With the cost of eggs on the rise, when my sister Candy came across a No Eggs Tomato Soup Cake recipe in our mother’s recipe box she thought it would be timely and helpful. It is one that Mom wrote out on an index card – we both always enjoy seeing the recipes written in Mom’s penmanship. My sister recently tried the recipe herself for the first time. It came out great.   The end result was so good that Candy said she will definitely bake this cake again – perhaps next time using a can of low sodium tomato soup. The recipe calls for a whole cup…

Mom’s Recipe Box: A Summer Twist on B&M Raisin Brown Bread with Crockpot Simmered B&M Boston Baked Beans

Posted on July 23, 2015

“Roll out those lazy, hazy crazy days of summer……”         Awhile back Aimee Seavey wrote a delightful food piece titled “B&M Brown Bread in a Can” for Yankee Magazine’s newsletter “New England Minute”. She spoke of canned B&M Brown Bread and B&M Beans made in Portland, Maine as a New England Saturday night supper favorite. True. Growing up in my Connecticut home it was especially popular during the autumn and winter months served with poached egg topped corned beef hash.   With the hot weather having settled in, and my recent discovery of B&M Raisin Brown Bread at Price Chopper ( the raisin variety is what I like best, but until…

Mom’s Recipe Box: Donna’s Apple Crumb Pie Commemorates Family Series First Anniversary

Posted on July 4, 2015

A year ago the Mom’s Recipe Box Family Series kicked off with a patriotic beginning on one of my mother’s favorite holidays – Fourth of July. It began with a recipe from my niece Donna, whose son is serving in the U.S. Marines. In commemoration of the 1st anniversary of the series which ran for seven months and featured family members adding to my mother’s collection of recipes, I asked Donna to share another of her recipes. She came up with the perfect one to honor America’s Independence Day, after all – what’s more American than apple pie. – JB           Donna’s Apple Crumb Pie   1 ready-fold refrigerated pie crust Crumb…
