Mom’s Recipe Box: No Eggs Tomato Soup Cake

Posted on August 7, 2015

No Eggs Tomato Soup Cake   With the cost of eggs on the rise, when my sister Candy came across a No Eggs Tomato Soup Cake recipe in our mother’s recipe box she thought it would be timely and helpful. It is one that Mom wrote out on an index card – we both always enjoy seeing the recipes written in Mom’s penmanship. My sister recently tried the recipe herself for the first time. It came out great.   The end result was so good that Candy said she will definitely bake this cake again – perhaps next time using a can of low sodium tomato soup. The recipe calls for a whole cup…

Mom’s Recipe Box: A Summer Twist on B&M Raisin Brown Bread with Crockpot Simmered B&M Boston Baked Beans

Posted on July 23, 2015

“Roll out those lazy, hazy crazy days of summer……”         Awhile back Aimee Seavey wrote a delightful food piece titled “B&M Brown Bread in a Can” for Yankee Magazine’s newsletter “New England Minute”. She spoke of canned B&M Brown Bread and B&M Beans made in Portland, Maine as a New England Saturday night supper favorite. True. Growing up in my Connecticut home it was especially popular during the autumn and winter months served with poached egg topped corned beef hash.   With the hot weather having settled in, and my recent discovery of B&M Raisin Brown Bread at Price Chopper ( the raisin variety is what I like best, but until…

Posted on July 9, 2015

Write-Up & Photos by Jacqueline Bennett newsandviewsjb.com   Anyone expecting to wait to be seated then served at a table at Lenny & Joe’s Fish Tale in Madison, Connecticut will be surprised. Unlike the Lenny & Joe’s a few miles away in Westbrook where that is the set-up, Lenny & Joe’s in Madison is an order at the counter, self pick-up, condiment corner restaurant. Customers can then seek out their own booths. What is the same however, is good food at reasonable prices.           With Hammonasset Beach State Park located in Madison barely five minutes up Boston Post Road, this more casual restaurant style is perfect for beach-goers or campers who want to stop in for a no-fuss bite to…

Mom’s Recipe Box: Donna’s Apple Crumb Pie Commemorates Family Series First Anniversary

Posted on July 4, 2015

A year ago the Mom’s Recipe Box Family Series kicked off with a patriotic beginning on one of my mother’s favorite holidays – Fourth of July. It began with a recipe from my niece Donna, whose son is serving in the U.S. Marines. In commemoration of the 1st anniversary of the series which ran for seven months and featured family members adding to my mother’s collection of recipes, I asked Donna to share another of her recipes. She came up with the perfect one to honor America’s Independence Day, after all – what’s more American than apple pie. – JB           Donna’s Apple Crumb Pie   1 ready-fold refrigerated pie crust Crumb…

Destination: Sea View Snack Bar – Mystic, Connecticut

Posted on June 25, 2015

Write-Up & Photos by Jacqueline Bennett newsandviewsjb.com    It is always a pleasure to discover a new and enjoyable eating spot. I have added the Sea View Snack Bar in Mystic, Connecticut to my list of go-to roadside clam shacks, after giving it a try a couple of weekends ago.     This is a place I have passed many summers en route to downtown Mystic or the Mystic Seaport Museum, and I took note of the fact that the parking lot was always full. Now I understand why.   Food quality is of course the best reason to patronize a restaurant. However, ambiance comes in as a close second. The Sea View Snack Bar offers both when casual is desired. The restaurant has…

Posted on June 15, 2015

Write-Up & Photos by Jacqueline Bennett newsandviewsjb.com   Beautiful weather accompanied the 2015 Taste of Mystic in Mystic Connecticut which ran June 12, 13 & 14. Crowds that turned out for the event had a chance to sample menu items from about 30 area restaurants. Seafood was a popular choice such as clams shucked on the spot when customers made their purchases at the “HARBOUR HOUSE at the INN AT MYSTIC”, as well as, Lobster Mac prepared by the “Portuguese Fisherman”. Soup lovers were drawn to offerings of Lobster Bisque and New England – of course – Clam Chowder.   The Taste of Mystic was set up in a parking lot outside the Olde Mistick Village shops with a large tent of picnic tables…

Mom’s Recipe Box: Crockpot Corned Beef & Cabbage – Happy St. Patrick’s Day

Posted on March 17, 2015

Crockpot Corned Beef & Cabbage   In honor of St. Patrick’s Day 2015, a first time attempt at preparing a traditional, homemade corned beef & cabbage dinner. After searching through on-line recipes that offer oven or slow cooker approaches, the (slow cooker) crockpot has been selected. All the ingredients were purchased at Big Y World Class Supermarket yesterday – small red potatoes, a head of cabbage, baby carrots, turnip, a small onion and a few thin slices of corned beef from the deli rather than a brisket.   This is a nutrient-packed meal. Potatoes are known to be loaded with vitamin B6 and potassium. Notoriously good for the eyes, carrots have vitamin K that is said to facilitate…

Posted on February 5, 2015

Article & Photos by Jacqueline Bennett newsandviewsjb.com   It was big for Bigg Play !   The sale of “Remy’s Grinders” on Super Bowl Sunday to benefit Bigg Play had a terrific response. Bigg Play is an organization based in Windham, Connecticut that raises money to send youth baseball teams abroad. This year marked the tenth anniversary of the annual grinder sales fundraiser.   According to Bigg Play President Bill Shea, an article posted on newsandviewsjb last week  – “Lengendary ‘Remy’s Grinders’ Reappear on Super Bowl Sundays” – gave the already popular grinder sales, a tremendous bounce. Before noon on February 1, when grinder pick-up was slated to begin, Bigg Play had already run out of meat and had to send out to restock. Rows and rows…

Legendary “Remy’s Grinders” Reappear On Super Bowl Sundays

Posted on January 26, 2015

By: Jacqueline Bennett newsandviewsjb.com   Much as the mysterious village of Brigadoon appeared once every one hundred years, “Remy’s Grinders” reappear twice yearly in Windham, Connecticut – in November and again on Super Bowl Sundays. Back in the day in Windham “Remy’s Grinders” ruled. Customers are said to have come from far and wide to make their way down the stairway into the small, below ground grocery store, nicknamed the “dugout”, in pursuit of grinders made by J. Remy Handfield. Although “Remy’s Grinder Shop” – better known simply as “Remy’s”- no longer exists, the below ground site where it once was, remains on Main Street not far from town hall in the Willimantic section of Windham. (Windham and Willimantic were consolidated several years ago.) Come Super Bowl Sundays, some 24 years…
